Grandma Betty's Mint Chocolate Chip Cookies

Ingredients

Makes 24 cookies

  • 1 1/2 cups of chocolate chips
  • 1 tsp of peppermint extract
  • 1 1/2 cups of flour
  • 1 1/2 tsp of baking powder
  • 1/4 tsp of salt
  • 1 cup of sugar
  • 6 Tbsp of butter
  • 1/2 tsp of vanilla extract

Directions

1. Soak 1 1/2 cups chocolate chips overnight in a ziplock bag with 1 tsp peppermint extract.

2. Microwave 1 cup of these chips for 1 minute in 10-second intervals, until they are soft.

3. Combine 1 1/2 cups flour, 1 1/2 tsp baking powder, and 1/4 tsp salt in a small bowl.

4. Beat together 1 cup sugar, 6 Tbsp softened butter, and 1/2 tsp vanilla extract in a large bowl.

5. Add melted chocolate, 2 eggs, flour mixture, and remaining chips.

6. Make into balls and bake for 8-10 min at 350F.
