Pork Tenderloin with Goat Cheese, Rosemary, & Honey

Ingredients

Serves 6

  • 1/2 tsp of garlic powder
  • 1/2 tsp of ground coriander
  • 1 tsp of light brown sugar
  • 1 tsp of salt
  • 1/4 tsp of black pepper
  • 1 lb of pork loin
  • 1 tsp of olive oil
  • 1 tsp of rosemary
  • 3 oz of goat cheese
  • 1 Tbsp of honey

Directions

1. Remove silver skin from pork tenderloin.

2. Combine garlic powder, ground coriander, light brown sugar, salt, and pepper.

3. Rub the mixture all over the tenderloin.

4. Let sit for at least 30 minutes.

5. Preheat the oven to 400F.

6. Drizzle with olive oil and cook in the oven for 45-50 minutes.

7. Remove from oven and slice into serving-size pieces (accordion cut, not all the way through)

8. Fill the gaps between the meat with goat cheese and chopped rosemary. Drizzle with honey.

9. Return to the oven for 2 minutes or until the goat cheese is melted.
