This was Grandma Gwen Morgan's recipe.
Makes 24 cookies
Preheat oven to 350F
1. Cream the butter well.
2. Slowly add the brown sugar and beat well.
3. Gradually add the flour and blend well.
4. Pat into two lumps that hold together, and then flatten the lumps slightly.
5. Put into two plastic bags or wrap each lump in plastic wrap.
6. Chill for about an hour.
7. Working with one flattish lump at a time (and keeping the lump you're not working with in the refrigerator, knead the dough slightly in your hands, and then roll out on a lightly floured board or countertop to about 1/8 inch thick. (Sometimes it's best to work in smallish quantities, tearing small chunks from the larger chunk to roll out.)
8. Cut into shapes and transfer them to a cookie sheet.
9. Bake 10 to 12 minutes or until only slightly brown/golden. WATCH OUT! They can burn fast!
10. Transfer the baked cookies to a cooling rack. (Be psychologically prepared for some breakage.)
11. Icing is in a separate recipe (honeybit.cooking/recipes/23)
