Variations. Mix up to 1/2 cup chocolate chips into the batter, or add three chocolate chips to each pancake while cooking. Add 25% more milk for thinnier, more crepe-like pancakes.
Serves 2
1. Melt butter and let it cool.
2. In one bowl, mix dry ingredients (flour, salt, baking powder, chocolate chips).
2. In a second bowl, mix wet ingredients (egg, butter milk).
3. Mix wet into dry.
4. In a frying pan on medium-low heat, cook a heaping tablespoon of batter for each pancake.
5. Serve with maple syrup.
